What is a good breakpoint of words per day to write? I've been at 1k per day as a minimum but I am trying to push myself to do more. What's a good pace for an aspiring author?

Just do whatever works for you. Some writers (Anthony Burgess and John Banville for example) write only a page or two a day because they're just very meticulous.
The more often you do something, the better you become at it. Continue writing about what you want to write about--speed, words, and the ability to think through a scene will come more naturally to you over time.
Remember this: the number of words you put on paper is inconsequential to their quality. What words would you like to be remember for, for having written?

I admit I don't know where I got the "page or two a day thing," but I did go back to his Paris review and found this:

So he may write a lot, but only to revise a page and get that one completely done before moving on.

1000 is quite a lot. It really varies from author to author though. Papa Hemingway set a goal of 500 words a day (he said), then you have Stephen King who claims to write ten pages a day (not with a 72 font size, I presume). I think it's important to write every day, then the word count depends on how you feel, writing while you're mentally exhausted and do not want to be there anymore tends to produce bad writing.
