Ignore the haters, OP. I recommend the "Book of the Dead" anthologies edited by John Skipp and Craig Spector:

"The Old Man and the Dead" by Mort Castle in the second volume is the best zombie story featuring Hemingway you'll ever read.

The great Shillster shall shill! Wait until May 15th if you want; my first four books will be going for free including pic related, and if you happen to be in the UK the sequel to pic related (Living amongst the Dead: Dark Days) will have a Kindle Countdown discount on the go. 0.99 British Pounds from May 15th-21st.

Not to be contrarian or an asshole, but maybe the literature groups on places like Reddit and Tumblr might have better suggestions than us lot here. Most of us who do actually read tend to read more classics/philosophy/history/postmodernism,etc rather than zombie apocalypse stuff. Not saying you have to leave - someone may have some good suggestions - but it's not usually the sort of stuff we'd read over here.
Like, literally the only example I can think of is the Walking Dead graphic novels and I know you probably would've gone through those already. Sorry, OP. ;_;

I recommend that you A Bullet Into Your Stupid Fucking Pleb Face by The Barrel of a A Gun
I don't know if it's your thing but I found the concept really appealing.
