What do you think about the concept of overarching plot?
Im having trouble writing my novel since im so concerned with adhering to prefixed ideas about how something should work, even if it might work better in a format where every chapter could almost be a standalone.
Should a book have a cohesive story? Should it focus more on delivering a chapter at a time and maybe then tying them all together by something overarching? Or maybe something else?

You aren't Joyce or Pynchon. Make sure there's a proper plot, because you almost certainly aren't good enough at writing to sustain interest without one.

Nice projecting loser. However, there is a plot. The "issue" is that Im struggling with balancing out separate scenes and chapters which all have their own themes from the overarching story that needs to be there to tie them together. Also Joyce is a meme and you fell for it if you actually like Ulysses for anything but how experimental it is

Overarching plots are usually easier if they never "tie into something". You may propose something is going on the characters' world and establish from the get-go that it never gets solved, it's just there for ambience, and in every chapter including the last one you develop that plot for some buildup. Being easier to pull off does not mean it'll look good on paper though.
More helpful for you if you can explain in more detail at what stage you are in, do you have the "lay of the land"? Did you already write 2 chapters and now wonder if you should/could tie them together? etc.
Also, what the hell is it about these streams? She's streaming some game, or something, or is it a donation-strip, or what the hell? If she's playing the game there would be no need to showing herself with that backdrop, and if she's stripping why is the game there. And if she's not stripping what is going on? If that's not postmodern I don't know what is.

been working on this for around 3 years soon, and most of that time has gone to everything but planning out a cohesive story from start to finish so im trying to do that all now to get an easier reading experience. Ive written two chapters, but I started off by sort of cheating since there are 3 chapters written from the perspective of another character, and since they form a shorter "narrative" on their own, I started from them
