I usually don't finish until I read the whole thing. Generally I stop after the last page - it's a good stopping place. How that takes depends.

A year for small books. Three months for anything over 800 pages.

I will not let myself take longer than 3 weeks, despite length. I'm incapable of fully experiencing a book if my reading of it is spread over, say, months.

Unfortunately The Recognitions is next on my list, so I will lock myself into a room and binge in order to meet the three week deadline.
