What would be a good answer if you were asked in a job interview what your favourite book is?
Would you be honest, pick something that signals stamina or something practical?

that is my father's favourite book. I would probably be honest and say Borges' Ficciones. Depends on the job though.

Why do they even ask shit like that anyways?

Atlas Shrugged

I'd be honest about it to not make myself look untrusting by clearly speaking unauthentically and tell them why they should read My Twisted World by Elliot Rogers

It's not to far-fetched. I never had a job inerview but from what I heard it's also a common question to ask about hobbies or how you spend you free-time.

My reasing is that if you know they could ask this question you could prepare an answer with a justification to make yourself look a certain way.
I know it's a bit off topic but I'm not sure what approach to take in a job interview.
Should I try to create a certain image of myself that doesn't reflect who I am but how I want to be perceived?
Or should I be honest and try to sell myself as good as possible?

Depends how good of an actor you are, string them for all they're worth in either case
