It's called virtue signalling. Publishers are doing what any company does, which is portraying themselves as morally righteous to their target audience.

The publishing industry is mainly geared towards middle class liberals. These people value "diversity" and "tolerance" (or at least, like to see themselves that way.) Therefore they're offered books which make them feel good about how tolerant they are.

It's all a bit pathetic, and nothing to do with good literature. But then the publishing industry has never been concerned with that.
