Is there any philosopher that addresses the "man is made through his own struggle" view of the world? The closest thing I can think of is stoicism, but most likely I'm missing out on some other names and works.

You've just described Nietzsche. You can also look into Nassim Nicholas Taleb's "Antifragile" and, as you've mentioned it, works of Stoics, especially Epictetus' Discourses.
