Dude i got the norton critical edition of metamorphosis, it has a whole bunch of essays, criticism, biographical details, letters etc.

You should check it out if you want to read more about metamorphosis. Otherwise I would say start with The Castle. The Trial is wonderful, but I think it's best to read The Castle first, simply to better frame your reading of The Trial.
