Definitely start with Hesiod for the creation myths. You should also read the Odyssey, Iliad, and Aeneid. Ovid's Metamorphoses as well

other two anons covered pretty much the essential. for supplementary readings, you can research on the greek mysteries esp. those relating to demeter, orpheus, dionysius, and isis. mysteries of isis are particularly interesting of you want to know about how egyptian myths influenced greek ones
