Could /lit/ share some advice on writing good essays.I'm a stemfag but I'm taking a course some psych course and it wants us to reflect on our first weeks in college. Am I supposed to be truthful about how hard my cs/math classes are? Or do I just sugarcoat and say its going great im happy etc

If I understood you correctly, you want to write a good essay, not an honest one. Start writing.

Just be truthful enough as you would if you were talking to someone casually face to face. Don't reveal the inner darkness of your soul to an inappropriate level, but still offer some genuine thought.
Also, just a tip, because you're a stemfag and this is something stemfags often get wrong:
Use the most informal language style that is appropriate.
Don't use long, latinate words when a more common and easy going short word will do.
Don't use awkward 'formal' sounding phrasing like using the word "as" instead of "because" when it would sound stilted and affected in speech.

Essays are for giving opinions. I don't understand why you would want to write that your happy. The best thing you could do is addressing some points in which the school is doing well:
"Math has become increasingly significant in the development of my academic career
BUT
it's focus on linear algebra rather than advanced geometry is keeping me behind in that which I truly want to achieve: becoming a true STEMfag
ALSO
CS classes have been useful for this and that reason bla bla bla
In conclusion
My STEM degree is useful but could be better blablabla.
