I want to write a Choose Your Own Adventure story, and I wanted to take a moment and ask you guys for any advice for writing in this format

it seems very similar to a text-based RPG, and it would be an unnecessary challenge if you don't have experience doing single-line narratives.
I would map out a starting scenario and a few different endings. Since the reader is making the choices, the easiest thing to do is make the reader identify with a central character who is faced with several situations and allowed various choices.
Even if you have just 5 choice events (each with say 2 choices) that already creates 2^5=32 outcomes.
So the trick is to force several lines back onto the same final outcome. For this reason a lot of these kind of stories have "dead end" type outcomes. ("you chose the Axe, which broke on the alien's armor and now you are dead. Try again.")
Keep a table of each choice event and make sure you track each possible sequence.

Choose Your Own Adventure books are dead, don't even bother with that. An electronic medium is required for this kind of story format to work. Write a visual novel. There's a general on /vg/ dedicated specifically to that. Most of them are just porn and dating simulators, but judging by the way the Japanese VN market works, there's also room for non-porn/dating sim VNs that resemble YA fiction as long as they have an assortment of pretty girls (or guys) involved. There's an English language """scene""" already, but it's pretty small and populated by weeaboos and attention whores. I'm not sure how many projects need a writer, I think there's much more demand there for good artists. If you wanted to write a VN you would probably have to set up the project yourself. It would be a difficult undertaking. If you're not a weeaboo you might be able to attract people outside of the typical VN fanbases by writing a sci-fi/fantasy story or a YA romance. The popularity of Gone Home and Katawa Shoujo suggests that there's a market for visual stories that just hasn't been tapped yet. Lots of people complain about lack of stories in games but nothing has stepped up to fill that void. You won't make much money from it right now, though.
