What books can I use to teach someone who only reads for plot the beauty of prose, symbolism, and insightful writing?

Pic is an excellent example but would be too difficult to start with.

For helping my friend out, I need to focus on writing itself. He didn't even know what prose was until recently, literally thought the only real parts of literature were plot and character development.
