Is there a way to argue that god does not want us to be happy? I'm thinking of Anselm from The Recognitions, or Pascal's idea of wretchedness.

yes but there are even better ways to argue against it.
but it largely depends on what you mean by happy. God does not want us to be stupidly self-satisfied and perpetually enjoying ourselves
