Where do I go next with Pynchon?
This seemed to be universally recommend as the starting point, so what should I follow it up with?

i just started with GR since i couldn't find CL49 or V in the library.
I think the whole idea of "getting into" an author is completely bizarre. Just read what you want.

Isn't Mason&Dixon supposedly as difficult as Gravity's Rainbow to get through, if not more?

I think someone who's not used to Pynchon's particular style of writing might have a hard time starting off with something like Gravity's Rainbow.
V. was the first book of his that l bought, but l dropped it after the first chapter. Reading Lot 49 and Inherent Vice before my second attempt smoothed me into it though, and l enjoyed it immensely.
Of course, l could just be retarded.
