I'm a self-proclaimed writer. I have finished 2-full length novels. Both of them are godtier you bet. But the thing is I'm learning IT security, and this shit is quite fancy too. I'm being torn apart. We all know we can only do one thing at a time and persuade one a job at a life. Which one should I choose? Professional writing or professional hacking?

Do both. Or rather, spend the next few years focusing on IT, make the money, invest it, save enough "fuck you" money to retire early. Then do whatever you want. Keep writing in your off time and when you're ready to go full time you'll have more life experiences to draw on and enough financial freedom to not compromise on your artistic visions.
Also, the world needs more hacker fiction like pic related.
