Can somebody good at English explain to me how the word "monkey" is pluralized as "monkeys" and not "monkies"

The E in monkey makes it so that you can't rearrange it into monkies. It must be monkeys.

That's not how it works.
Generally depends on if the word came from Latin or German.
Most words that came from French conjugate like their Latin roots, "-ies" or "-ioin." If I had to guess monkey stayed German somehow. Because the peasants in England during the Norman occupation didn't bother to learn French, most animal and verbs stayed German.
