Think of it like this. There's two basic mental molds or personal archetypes. There encompass lots of different traits we think of as masculine and feminine, especially gynephilia and androphilia. Someone can be towards the middle of these two models, someone can be a mix of parts from both, but they still hold true in general.

A straight acting gay guy may theoretically be of the gynephilic type but androphilic anyway. More likely though is that he simply is towards the middle, or his other feminine traits are subtle and don't get noticed, or he acts straight because he knows it's what gays like even though it doesn't come naturally to him, or he's not really androphile at all and is bi even if for his own reasons he doesn't date or sleep with women.

Souls can't be which hormones you prefer because some gynephilic souls (straight cis men, straight ftms) prefer male hormones and other gynephilic souls (lesbians, agp mtfs like you) prefer female hormones.
