>“have you decided what you'd like to order, young man?"
>"here you go, SIR" (I swear to God the waiter put an extra emphasis on 'sir')

Passing doesn't happen in a linear progression, it depends on a lot of factors, including the eye of the beholder. And it sounds like you weren't exactly misidentified as a man, but correctly identified as a trans woman in the second encounter, so the waiter decided to be a dick.

>but correctly identified as a trans woman
B-but I wore loose casual pants and a large oversized coat, like this: https://ae01.alicdn.com/kf/HTB1JZXkIXXXXXXmXFXXq6xXFXXXb/2012-new-men-silm-Woolen-overcoat-fashion-Lapel-long-wool-coat-business-casual-coat-winter-man.jpg
I was supposed to be COMPLETELY invisible.

Some people don't care. Some people know, and are friendly. Some know, and are purposefully mean. You have good days and bad days. If you look smart, dress your age and don't act like an anxious creep, you'll never find yourself in trouble. I swear to god young mtfs are ridiculously ashamed of themselves. You're a normal human being. Try acting like one. Everyone judges everyone. They're not specifically going about their business waiting for a chance to ruin your day. You can at least try to meet people half-way by not stuttering at them.
If we are being really optimistic, maybe you passed as a girl, but the waiter assumed you were a trans man because you tried to present as a man, and added the extra emphasis on 'sir' to make sure he didn't accidentally misgender you as a girl.
Not very realistic but there is a chance. If you always go by 'miss' except this one time it may have been what happened.
