you write an argument for each side, send them to the person running the test and tell them which side you're on, they run each argument presenting it as an argument for the side you specified it was for, and everyone else has to figure out if you're really on that side or not
after everyone's voted they announce which side you were on, like so:

You're not writing an argument for each side, you're answering questions of which only one of which is about the side.
The polling wasn't separated by belief last time until part way through, when comments pointed out that that's like the entire point, and in the reminder the person running it says she hasn't decided whether to separate polling this time and that there's probably no point since everyone agrees with each other anyway.
