Our, you know, it could be because most mtf kids grew up in the late 90's and 00's where anime is mainstream as f.
It could also be that an mtf's vision of femininity is so skewed that they seek the over the top behavior of anime girls.

I think why people would like it, is it's easy to project yourself on an anime character, and additionally everyone is totemo kawaii.
