It's just as common for people to be "bi" and exclusively date inside your gender.

Several gay people I know came out as bi first so people get comfortable with the idea of then being with other people of the same gender

There are many, many more straight people of the opposite sex than there are gay/bi people of the same sex. For every gay man I could potentially date, there are ten straight women. It's only statistics that out of all the people I date in my lifetime, there'll probably only be maybe two dudes to a dozen women.
