From the video it appears that the bikers are in pursuit of the truck and are driving in an oncoming traffic lane for an extended period of time in order to do so. So right off the gate, they're driving erratically/dangerously AND they're making threatening gestures/presumably yelling obscenities or other aggressive words. The video is conspicuously edited not to feature the initial altercation, which raises immediate suspicion that they were the instigators on the road, likely (as they are doing in the video itself) driving erratically/dangerously. 100% likely they were exceeding the speed limit, it's just a question of how out of line their other actions were, to be honest. To anyone who has ever associated with groups of >3 bikefags, it's plainly apparent that their intention was to force the truck driver off the road and gank him during the video. Cletus would have been 100% within his rights to fire from the truck. Cletus the 2nd would have been 100% within his rights to ventilate them during the confrontation, as they were making moves that indicated they were about to engage in a gang assault on a lone individual by the side of the road. The fat screeching redneck even yells as much, they ain't dumb, they're onto the bikefags' game. It's entirely likely that the redneck ambush was set in response to verbal threats yelled to the truck while they were still on the road.

This is why Stand Your Ground is so fucking amazing. It places the onus on YOU not to be an aggressive cunt trying to start shit, because it's really easy to make a case that you were reaching for your fucking waistband/making threatening moves. KY CCW instructor and armed security officer here. Idk about the laws in other states, but here in KY shooting in self defense only requires reasonable fear for your life. So shooting the shotgunner the second he got out of the truck and approached, you'd be in the clear. If it was somehow proved he had no intent on shooting anyone, you're still in the clear because you still had reasonable cause to believe your life was in danger.

Now... when shooting in the defense of another... things change. If you were to shoot the man beating your friend, and it was then proved or otherwise decide said friend was in no mortal danger, you would be charged with murder. The law requires the threat to be real, or "as is", simply having reasonable cause to assume deadly intent is not enough.

If you were the man being beaten, you would have a strong case of self defense as most people would agree that being clobbered by a man of that size is lethal force. If you were even arrested in that scenario it would be unlikely to make it past grand jury.

It depends on your state. In Texas one could have shot the guy with a knife if he was coming at them. One could also shoot the guy point the gun around and threatening. One COULD NOT shoot the guy assaulting the teenager because he did not have a weapon and it was a simple fight. i try to think before taking action, where i live we normally shoot first and ask later but we also know when and what is going to happen, i haven't seen a situation like this were someone steps into a fight with a shotgun.

Still, i'm not sure it would be possible to have a gun and not escalate the situation, i train to draw my gun when in possible high risk situations (again, that's for robbers, carjackers, etc) and i've seen people end robberies just by demonstrating they had a gun, but intentions aren't the same, people aren't the same, i'm really not sure what i would have done in the moment.
