I'm planning on LARPing about as a crusader but I'm confused about just how much armor they wore. There's pictures all over the place of some of them just wearing great helms while others like this where they're wearing pauldrons and gauntlets. What's historically accurate?
They didn't have pauldrons, and they would often go bare handed or use leather gloves, relying on the guard of their swords hilts

Armour changed over time, so you will first have to decide which crusade. Knowing where exactly your crusader is from could also help in some cases.
They almost certainly had a helmet or at the least a metallic skullcap.

They wore cotton vests (4), followed by leather arming doublets (5), then chainmail hoods, greaves leggings and vests that reached down to the thighs (6), sometimes with kneepads (7), casque helms, then greathelm variations later on (2), and the well-known white tabard with a red cross over everything.
Armor was pricey and kinda hard to come by back then, especially well-made, elaborate platings that allowed movement, like gauntlets and pauldrons, so most of them didn't have them. Most templars were commoners beckoned by the pope and given very basic standard equipment for their mission.
