I bought an opinel carbon and stainless blade knife because they were so inexpensive. I have a set of stones for my chisels (1k, 4k, 8k). I don't notice a difference between thickness or sharpness out of the box. Also they are thinner than any knife I've ever known, and I don't see a grind or bevel or anything. Should I sharpen to the same approx. 22.5 degree angle as other knives?

Wood. 8k seems to be average for chisels. Some workers go into higher grit compounds.

Chisels need to be razor sharp. They can act like a plane in a pinch that way.

once you get above 1000 all you're doing is polishing the metal. I can get my pocket knife sharp enough to shave with by using 1000.

IDK, I'm not an expert, but every respected woodworker does it. I don't know if it's accurate, but even if you are shearing off quite a bit of wood, you want it taken off evenly, at a nearly cellular level, and that's why having 8k+ sharpened is helpful.
