In my neck of the wood the middle ages usually gets an end date of 1523 or 1527, so a good, mature snapping matchlock arquebus would be an option. Pair it up with a twin to bet a lot on two shots, or a melee weapon to one shot but with a better plan B.
That armour sounds rather more like LARP gear though, though hard leather lamellar has been a thing here and there.

Mail over gambeson is extremely robust defence and not that light and easy to move in, honestly. Maybe harder than full plate, actually.

An early matchlock/arquebus since most of my knowledge in weaponry is firearms, but of course a melee item of some sort would be utterly crucial. A bayonet would be fantastic but I don't think bayonet tech came until sometime in the Renaissance, perhaps late 1600s or early 1700s before it got good. A spear would be ideal since less skill is required to use a spear effectively than to use a sword effectively, but to have both a long-ass matchlock musket (flintlock didn't come about until around 1600AD) and a long-ass spear? Nah, too much of a nuisance to carry around and switch from one to another. Ideally both sword and shield would be preferred over just a sword, but then I think the shield would count as a third weapon so I'm gonna have to go with a longsword. I'm a big guy, could probably handle a bastard sword without overly much trouble, but still I think I'd need to take advantage of as much speed as possible so a shorter/lighter longsword would likely be my best bet. Maybe hold my musket in my other hand strictly for blocking purposes while focusing on offence with the sword in my dominant hand.
t. literally no experience/training in hand-to-hand combat other than fucking around with bayoneted rifles on occasion, would doubtlessly suck with a sword but better than nothing
Ultimately, I'd want a Mosin. A bayoneted M91/30 is long as fuck, durable as fuck, and of course the amazing accuracy/rate of fire compared to medieval weapons would be God-tier.
