A lot movies actually did this, but then directors thought it didn't look hollywood and told the actors to do it differently.

Gun handling in movies has actually gotten far better since the 70's.
For example, I hardly ever see bad trigger discipline in most big budget movies anymore.
Audio engineering has gotten far better as well. Go watch Dunkirk at a movie theatre and tell me that those rifle shots in the beginning weren't authentic as hell.
