I shoot with my left hand and operate the bolt with my right.

I reach over and operate the bolt with my left hand. I tried doing it the Ian way by using my right hand to cycle the bolt without breaking the grip on my firing hand; but i just ended up pinching my hand when the bolt comes back.

OP actually asks a good question. My advice would be to watch a few youtube videos so you aren't re-inventing the wheel, then get a bolt action .22 and a 500 round box of ammo and start figuring out what works for you. When you've shot up that box, you'll have picked a good process and come close to perfecting it.
