Say you were out in public and someone aimed a gun at you but you had superior speed and took them out first, would that be murder or self defense?

I thougt John Wick loved his dog.
most likely self defense. A few states have a duty to retreat where, if safely possible, you're obliged to run rather than fight. However the "if safely possible" can be flexible and can also account for someone you're defending. Walking with your grandma who can't run? No duty to retreat. In a corner or fenced off? No duty to retreat. In those cases it'd likely be deemed self defense.

Phew.. for a second I thought you were going to say they were going to make me watch John Wick 2 at gun point. Give them $8.50 and just say I'd rather not.

Depends on the level of authoritarianism in the government of the location of the incident.

Self-defense. Aiming a gun at you is considered threatening with lethal force, which justifies using lethal force in self-defense. I think all the states agree on that.
I'm assuming you're a Burgerlander. If not it might be different.
