I'm right handed dominant but left eye dominant. Should I just get used to the weaker eye or switch over? If I shoot leftie, what are some good handguns with ambidextrous controls?
Just buy a striker fired pistol?

Change your dominant eye. Ocular column plasticity drops like a rock after puberty but it can still be done. I had to wear an adhesive eye patch 8 hours a day for almost a full month. Worth it though.

My father just found out there was another way, which is more confusing because he is left eye dominant but he's right handed.

I'm cross dominate left eye right hand. Not correctable; amblyopia (although recent research says that adult cure might be possible soon with VR)
I can shoot most guns no issue. I shoot rifles left handed and hand guns right handed, although I also try to shoot handguns left handed as well.

Not OP, but I am Righthand, lefteye as well.
My right eye's focal point is practically a blind spot and I can't even read with it, but I can use my right eye for very effective peripheral vision.

Ignore whatever else you've heard and read a wikipedia article. There is no difference in the brains of people who claim to focus with one eye or another. It's not like being left handed. It's just an imaginary thing.
I can change my prefered eye in an afternoon of forcing myself to look through it. My left eye apparently has a much thicker optic nerve than my right eye, so it sends more information to the brain and gets priority, but I can still focus through the right eye by forcing myself to.

Wife has this problem, I make her shoot both eyes open from a normal weaver stance with handguns...she does fine. Shoots rifles left handed, but does well

I find squinting my left eye a bit really helps get rid of the whole "where did my front sight go" or "why do i suddenly have two of them" kinda shit while while still being able to maintain acceptable situational awareness. do lose a little peripheral vision though.

Same, I put a piece of basic Scotch-tape over my left eye lens to blur the gun, allowing me to aim with my right eye. Works fine at the range. Red dots also allow you to shoot with both eyes open. It's not a big deal.
Learn both ways.
