a carrier needs to be able to sortie all of it's aircraft quickly. our huge nimitz carriers are limited despite having 4 launching points due to the need for the catapult/no ski jump

Steam catapults are a bitch to maintain regardless of the age of the basic tech. There are miles and miles of pipe in a Nimitz class, the only purpose of which is to support the catapults. Lots of moving parts, lots of old pipe, lots of parts that need love and attention and replacement. Lower operating costs is a major driver behind the push for electromagnetic cats.

Ramps take up space that can't be used for anything else. Have a look at the bow of the Liaoning or QE and then a CATOBAR carrier.
You can also launch pretty fast off ramps, you might not even need more than one.
And another reason is that ramps require the carrier to be underway at speed into the wind, multiple ramps would all have to line up the same way.
