I would like to say AK, VZ, or AR15. Realistically though probably something in .308 or a fudd round because that's what's gonna be the most lootable

This. You can carry more ammo with a .22 gun, while it won't be able to take out a large animal, it will let you kill smaller ones which are likely going to be more common than larger ones. You can use it for self defense, but since your goal is self defense and not going to fucking war it also makes a great survival rifle.
But between the Nugget and SKS, which is better for SHTF? Discuss your views.

Nugget has more power and could punch through armour/animals that SKS wouldn't. It's a pretty decent sized spear with the bayonet. Also a better prop for your shelter however retarded it is. It is also cheaper.
SKS has lighter ammo, is semi-auto, is handier, has more functional strippers, also has a bayonayse. Semi-pistol grip is nice thing to have. Bigger aftermarket however shitty it is. Tech sights are nice. More expensive.
Myslef? I'd take the SKS, even though the Mosin is fun as fuck as well.

12ga shotgun for a longarm. Maximum versatility, ammunition is the easiest to manufacture/reload, pretty good at everything except hunting large game in very open country.

Wrong. Not common enough. Honestly there are a lot of good suggestions here, it all depends on what your plan is, and where you live. Shotguns, ARs, AKs, hunting rifles, .22s, and wonder nines can all be ideal choices in certain situations.

A 556 model might be a little better in the random ammo finding category though.

My likely worst case scenarios are pretty much only going to turn it into a single shot, but still very deer capable gun.
Even if I shot all the 4000 rounds I had on hand, maybe I'd be a bit closer to wanting to replace a spring or two? Everything is is damn unlikely to ever break.

I think glocks feel like shit to shoot, too sharp of recoil.
There's 9mm pistols out there that feel downright pleasant to shoot if you are going for a full size pistol.

Even though scavenging for spare parts/ammo is bullshit, glocks chambered in 9mm are by far the most common handguns in the entire world today.

Some kind of .38/357 magnum revolver.
Bonus point for custom building a 9mm/.380/.38 super/whatever the fuck autoloader rounds are the same diameter and moon clips for it to swap the rounds and have fairly excellent variety of useable ammo.

As for the rifle, some form of AK or fudd hunting rifle in 7.62 RFN or 30-06.
Cheap to feed and easy to feed as well, and they're pretty hard to fuck up.
In a pinch they can (supposedly) be run off of black powder for a little while.
These should be easy to keep running and fed even after we have to start making ammo.
I would assume that the metro is about the level of shit we'd be looking at and not complete and utter annihilation.
