Here's the earliest known European depiction of a cannon. As you can see, it's used to fire bolts, rather than arrows.
While balls of stone and metal were probably also introduced quite quickly, and then became the standard before long, we do see bolts still in some use more than two centuries later, like this example.
Bottom here is an incendiary rocket for use in sieges, early 18th century. Launched from a cannon.

The incendiary bits here would most likely consist of a bit of fibrous material soaked in an incendiary mix consisting mostly of saltpetre, with some sulphur, and a small touch of charcoal. The whole thing was then covered in another mixture consisting mostly of sulphur, with some saltpetre and a touch of charcoal.
