I've used guns for work but never owned one. I have a gun tentatively picked out, but I am unsure as to which model to get.
Is there a real difference between blued and stainless steel other than the color/price?

Stainless will fare better against corrosion, if you cc your gun and keep it against your body all day
Also for a bare stainless finish you don't have to worry about the finish getting worn off with use

As far as finishes go blued is outdated as fuck.
It's extremely delicate, gets scratched or rubbed off by anything, offers minimal corrosion protection, and requires that you oil it regularly to keep it in shape. On the plus side it really looks great.

Is corrosion really that much of an issue for a gun that won't be exposed to water or the elements?
Or is the implication that sweat will make your gun rust if you actually carry it

Sweat and skin contact will rust your gun just as fast as contact with salt water.
This includes contact with your skin from gripping it while shooting.

depends on climate if your near a coast or someplace with high humidity stuff rusts
