Iron itself was not rare - in fact, in saxon england, the sheer volume of iron production is pretty amazing, far more than you'd believe. Iron is used in nails, in chests, in fixtures and fittings constantly.
What is rare is _steel_ - iron's common, but steel is very rare and valued greatly - so knives are scarf-welded a small strip of steel on a thicker iron back. spears are iron, with a tip of steel, and so on. And that's one of the reasons that viking age swords were rarer - that's a lot of steel, even just for edges.

People probably picked up the odd wood axe from time to time, but that would be an exception rather than the rule. Something people did in emergencies, if you're going off a-viking to war, you're going to have that head flattened out, lightened and re-purposed as a fighting weapon or get one built to a purpose.

You just can't swing a wood axe fast enough, fighting axes are a whole different animal, completely different head design and edge profile. Even this big motherfucker I made which is 8" long, has a 7" cutting edge is super light compared to block splitting, timber felling axes. Even craftsman broad axes with various similarities are much heavier construction and their handle geometry is also much more mass in their design to withstand the hard work of beating on trees.

Axes as weapons are light, fast and very, very sharp.

Scandinavia was not a mineral rich region even back in the early viking age. As such, iron/steel was more expensive and was used much more conservatively than in later centuries and regions. Axes are associated with vikings because it was a much cheaper alternative that required less use of metals. They were also much cheaper to replace, should they be damaged in daily use or in battle.

Many of the swords that were actually used in Scandinavia during the viking age were owned by the wealthiest individuals and were passed down or gifted to others. Some were taken from other parts of Europe during raids.

In regards to combat, they are not that impractical. Most had a thinner head that your average wood-splitting axe/hatchet which allowed them to be much more maneuverable. The "bearded" head shape allowed them to hook an opponents weapon or shield and pull it out of the way. The axes used were also much more effective at wounding an enemy through chainmail than a sword, both by hacking through the chain links and from the impact force transferred by the head. This is even further proven by the fact that most viking swords had a broad blade without an acute tip which would allow for easy penetration of chainmail.

Like most of the stuff in your ideas, that bit is pretty much 100% the opposite of reality.

most viking age swords are wrought or pattern-welded cores which sit around 25-30 HrC hardness

they are soft, not brittle, and relatively weak, meaning they are more likely to bend, than crack. people rapidly worked out that a sword breaking was likely to kill the user, whereas a sword bending was problematic but likely to be possible to adapt to. Soft heat-treatment was developed fully 1,000 years before the Viking age.
