Statistically this is highly improbable. There are only ~1.2 million of them in the entire US. Odds are they binged on pasta one too many times, ended up with (very common and easily predicted) bloating, and decided "welp, must've been the gluten and not any of the 10,000 other ingredients in the pasta or the fact I consumed 8,000kcal of it in one sitting"

Since gluten is found pretty much solely in complex carbohydrates such as potatoes and bread, odds are it has nothing to do with gluten and everything to do with them limiting the single most calorie-dense source of nourishment.
