Comfort. You don't have to dress around having a pistol stuffed in your pants. This also lets you carry larger calibers without issue.

On the flip side, you need to invest in a good retention holster, since your weapon being unknown is no longer a fact.

The idea that open carriers are targeted for their firearms is something that unfortunately doesn't seem to have any data for or against barring anecdotes. I'd love to see something, though.

Anyways, I open carry once in a while because its Texas and it gets hot as fuck in the summer and I really don't want my CC holster rubbing up against the backside of my hips covered in sweat.
