When I take the kids (8 and 11) shooting for fun and not marksmanship practice:

Print life sized pictures of flys as targets.

Radio control car with a duck decoy as a body.

1/8 alloy sheet in a frame. First one to punch through wins.

3" x 3" block of wood. Throw out and keep it moving.

Ballon race. Twenty balloons each.

Get a deck of cards. Set them up so the face of the card is perpendicular to you. Try to split them in half.
