They had less experienced troops and commanders incapable of using their armor effectively. As is the norm in nearly every modern conflict involving Arabs.
Also, the Israelis did have tanks. They got M4 Shermans as well as some French stuff.

While you could argue the Arabs had better weapons, it is clear by the result of the war that they did not use them as effectively as the IDF used theirs.

Arabs are a bunch of tribal-centric ruffians that hold little to no real allegiance or faith in their respective nation-state, are predisposed to being distrustful towards anyone and everyone, and use fatalism ("if Allah wills it") as an excuse to forego basic tenements of warfare. This is why they have been absolutely shit-tier at warfare, and the moment someone who feels an iota of pride in his cause and knows how to shoot a rifle halfway decently, they get their collective shit pushed in. It's also why IEDs and suicide bombings are the only way they can even begin to cause serious damage; both are crude, cheap, basic methods that require only some old Soviet artillery shells and a farmer willing to die over the words of his Imam.

For starters, lots of Israelis had British military training, as many of them volunteered for the British war effort during WW2. In fact, so many Palestinian Jews volunteered, compared to so few Palestinian Arabs, that this forces were renamed "The Hebrew Battalions".
In addition, the fact that "the greatest, Biblical tire, Jewish event of the last 2000 years" was about to happen, inspired many, including various military officers and other profession holders from all around the world, to come to Israel and fulfill said dream. To this day, it's the reason why many Israeli doctrines are a mixture of anything from Russian, through Finnish, British, American and even German ones. The entire special forces model is based on the British one, the leading example being Sayeret Matkal- the prime Israeli special operations unit- being a direct copy of the SAS despite the SAS never taking part in it's creation.

Next was cunning: way before there was a movie named Argo, the Israelis had already had a man pretending to make an action movie, borrowing several military airplanes, only to have them take off and never land in the last day of shooting.
Another example, as a nice elderly man told me on a lengthy train ride, is that when he was only 16, he came across a bunch of soldiers and joined them. By pure luck, they manged to capture a truck with 2 Egyptian soldiers leading creates of beer to their Be'er-Sheva HQ, so he, looking like an Arab, took their clothes and rode into the the base with soldiers hiding behind the creates and taking the entire base without firing a single shot- which lead to the rest of the city being taken over easily.

Improvisation means that Israeli doctrine dives lots of freedom to soldiers and officers about how they act and execute orders, putting a lot of trust into them, unlike Arabs.

And yes, moral is a hugely important factor. that's the difference between a man that charges into combat and a one that hesitates and stays behind. A man fights effectively and a one who doesn't. For that matter, the entire concept of military discipline, at least according to Israelis, is a mere robotic supplement that's designed to kick in when a soldier is low on moral.

The Jews also were well organized while the Arabs were poorly organized. That's how it still stands to this date. No armor and weaponry can help you on a big scale, if you can't use it well as part of the global war effort.

And lastly- luck. Well, stealing war planes from France was a risky move and they got lucky the mission wasn't busted. They were lucky that in the chaos, the Brit left behind some equipment while leaving. Even the story about the elderly man- they were just lucky that he was looking like an Arab and just joined a group of soldiers that captured a truck moving beer to the main HQ in the region and that he managed to get in without getting discovered.

That and the deeply rooted mythos of officers never using order "forward! ". They say "follow me!" instead.

This builds a lot of trust in soldiers and provides awesome unit cohesion. On the flip side, compared to other armies, Israel has crazy horrible soldier/officer loss rate. To the point where during a retreat the oficers are supposed to stay back and cover the line soldiers. They also lead recon and do all others frontline jobs personally.

In israeli wars officers and commanders consistently tend to be 30-45% of total number of killed IDF personel. In US army its about 10%.

A side effect ishigh independence and flexibility - any soldier or NCO knows that if the chief bites it, they are supposed to take over and finish the mission. Its almost impossible to effectively decapitate isreali unit, because high loses among officers are expected from the start.

I did a report on this in high school, so take this as you will.
By what I recall, the UN called a one month cease fire almost immediately. During this time, the Israelis bought weapons and trained, while the Arabs bickered between themselves on how the were going to divide israel if they won.

After the ceasefire, the Israelis were better equipped and better trained then the Arabs, and they wrecked shit.
