i recommend something with a metal frame, it helps to provide a more comfortable shooting experience because the mass of the firearm soaks up recoil
personally, I carry a P230 or a P938
stainless is nice because there's no concern of corrosion, but many modern finishes (i.e. teflon, black nitride, ceramic or epoxy-based coatings, etc.) will hold up just as well
