The beauty of the AR-15, is that you can buy/build uppers in different calibers. There are even .50 BMG AR-15 uppers available. You'd be fine with 7mm for ANYTHING in North America.
Small game shotgun = 20 ga. 20 ga. is 50 caliber, to be exact. I've taken many deer with 20 ga slugs. The problem with 12ga and small game is the amount of payload. Look for 6 shot for squirrel, rabbit, and birds. 4 and 2 shot for larger fowl like large ducks.
Pistol, the bear thing is not really realistic if you want to conceal it. I'd trust myself to a 10mm hard-cast like Buffalo Bore against bears. Trayvon was killed with a Kel-Tec pf9 and it's the tiniest/thinnest 9mm on the market.
