I know nothing about guns but how the fuck do these sights even work, if the barrel is below the sights where you aim, how does the bullet hit what you're aiming at? wouldn't it hit below what you're aiming at?

When you shoot, the barrel tips up for a second and shoots at where the sights are aiming so the sights have to be higher. It does this to "lob" the bullet.

This is correct. On rifles the gas tube tips up the end of the barrel slightly, and on very old or basic rifles the sights are much lower - because the barrel does not tip up. Most firearms these days tip up and the sights on an ar15/m4 are higher than normal because the gas tube is so long, there is a lot of upwards tip.

True but you need to keep your angle below 45 degrees to avoid going below the plane of bullet elevation. "Gangster" style sideways shooting is inaccurate because at angles greater than 45 degrees the barrel tip actually sends your bullet to the left (or right depending on how you hold it)

Hip firing works fine if you stay below the bore axis, but beyond that it's just basically guesswork - the closer you keep the firearm to your upper body negates a lot of the "drift" you get from the barrel tip.
