What is the modern-day equivalent of cowboy guns?
Like, what would cowboys use today if they still had to be ready to kill outlaws on a moment's notice?

Glock 19. But 2 of them, both worn butt forward for crossdraw or cavalry draw from either hand.

Well cowboys do still exist. Where do you think your delicious beef comes from? And cowboys today use the same guns everyone else uses today, just like they used the same guns as everyone else used back in the 19th century. There's no such thing as a cowboy gun, only guns that are used by cowboys.

As a Wild West enthusiast, there's no place to free these days.
You can't tame the wild lands using only a Colt and a few wits.

My brother rides a horse all day checking cattle. Lately he carries a .17 hmr bolt action Ruger. He also has an SKS. He doesn't own any handguns.
Me, I drive feed trucks and tractors and shit. I keep either an AK or AR in my truck and a .357 GP100 on my person.

Most ranchers over the age of 50 have 30-30 Marlins in ready racks in their pickups.
Most ranchers under 50 have ARs of questionably legal barrel lengths in holsters on their 4-wheelers.
These days you can't be an outlaw, and you can't hunt outlaws.
Shit sucks.

But I don't want to get arrested for doing a public service.
