A couple 8 inch lag bolts would work.
Just make sure to angle the plate so ricochets go into the dirt. The plate is bullet proof so the bullets/shards have to go somewhere.

I used a 20 dollar folding sawhorse and two U-bolts. Mounting to a tree stump would be easiest with a good hammer, a drill, and a length of rebar.

The one I get has a mounting kit with it which is bolts, nuts and chains, and it is created in such a way that mounting by the chains angles the plate down perfectly, so id prefer to do that.

They don't. If the pole just gets bent up, no biggie. But be advised you will probably shoot it in half at some point. Sooner rather than later if you go bigger than .22.
Same goes for any way you'll mount it though. Best way to avoid that is to not miss.

Bolts and chain is cheap if you have a real hardware store and not something big box
Proper hardware stores will sell by the foot and by the piece where as stuff like Menards or whatever you have sells overpriced pre-packed stuff
Also this is 1/2 inch, so it stands up to nearly anything except magnums and AP
