My issue is, I don't know anything about swords, and there are multiple options that have things to do with terminology that I don't understand which affect the price. Any advice?

I don't get the appeal of a sword that's isn't an actual weapon, even if its just for decoration. But to each his/her own.

Something that is not "full tang" should not even exist...
When it comes to the blade material, all non folded types will pretty much look pretty much the same. When folded the pattern will be more or less visible depending on the used types of steel.
The main choice that also makes a difference in performance as a weapon is between a fake and real "hamon", the area of hardened steel at the edge (the back of a Japanese style sword is not hardened.)
