A lot of people have trouble dodging bullets. They either dodge one bullet and run into another, or play too conservatively and push themselves into a corner, then die. This happens because they don't have quite the right perspective.
Instead of trying to move out of the way of bullets, move into safe areas. Instead of looking at individual bullets, look at the flow of bullets as a whole.
When you can tell how the whole curtain of bullets on the screen is moving, you'll be able to tell what areas will be safe for a few moments. Move there, then figure out where your next safe place is.

In terms of strategy, if you have to be so focused on dodging bullets that you can't aim at the boss, use Reimu's "A" shot type. It has homing bullets that will deal damage to your enemies no matter where you are on the screen.
If you can aim at the boss, Marisa's "B" shot type deals lots of damage, and also has the best bomb in EoSD.

Winning at eosd is easy.
Here is my 10 step plan for winning at EoSD.
Step 1: Use Marisa B for the long bombs.
Step 2: Select the highest number of lives.
Step 3: It should be obvious but play on normal.
Step 4: Try not to move in panic all over the place, it will make things worse.
Step 5: Shift for focused movement, you can dodge many things by just moving slightly to the side.
Step 6: Use bombs on anything you have difficulty with, you get 3 bombs per life so use them often.
Step 7: Persevere through will and use of continues to stage 6 and face Remilia.
Step 8: Undo pants.
Step 9: Whip out dick.
Step 10: Fap to the objectively best 2hu.

You are now winning at EosD.
