how do you even decide which version to evolve to? in real pokemon I just pick whatever looks cooler. do you put all the points into the highest stat and the rest into hp? my mima has the speed nature, but her base speed looks low so will putting points into it make a difference?

Those are IVs and they only matter post game, and it's easy to get perfect IVs post game. Just save up your shards.
