Where did the Japanese folklore of a rabbit making Mochi on the moon originate from?
Oral tradition. Some dude came up with the story, it was popular, and was retold.

Rabbits represent reproduction, the moon represents an egg,rice represents sperm and the hammer represents chastity/abortion. The Japanese have too many children and are very much aware of this, so they created some clever folklore demonstrating how males should be denied sexual relations with females.

In Chinese myth it's stuck on the moon making immortality pills, along with Chang'e. Immortality medicine later became mochi and Chang'e was forgotten.
Mooncakes are delicious btw, not sure what Japan does for the festival. Moongazing seems nice too.
