i'm not sure if it's an asian thing in general, but for japan it's in part due to a proverb from judo, that is "柔よく剛を制す(ju yoku gou wo seisu)", meaning "softness overcomes hardness", or "skills beat brute force".

A demographic shift occurred. Take Gundam, for example. It was aimed at young boys for most of its history, but that changed when SEED started catering to teenage girls by casting male idols and making the main characters effeminate melodramatic bishounen. This type of character did go out of fad, but regardless of that anime was always more about coming of age stories with young boys growing into manly responsible men, so stuff like Hokuto no Ken and Otokojuku were actually just outliers.

yeah, some of them comically large
but it's not really a set in stone thing. some of the bigger characters are villains like Moriah. some end up being good guys/gentle giants. Then there's just regular humans that are inexplicably taller/bulkier and no one bats an eye like Doflamingo, Whitebeard, Kuzan
but overall it seems like the overall best tier end up just being regular humanoids like Shanks, Luffy, Gold Roger, etc
