It's a form of realism, GoT was meant to break the mold of fantasy models established by Tolkien and it did so well I think. The make or break is going to be how the series ends, Martin has been on record railing against good vs evil tropes and tthis is exactly where the history is headed which means he's going to have to pull some major twists to pull through, that I'm looking forward to.

Also GoT has nuance, villains do noble things and have admirable qualities, heroes do fucked up shit and can be ´pretty lowly, you really can't tell them apart as easily.

In the books the white walkers are beautiful creatures and it's hinted there actually is a side to their story that isn't just being plain evil.

No, he's not. He certainly is not a writer in the mold of a Camus or a Garcia Marquez but he's good at his craft. The man has an amazing knowledge of history, GoT is largely based on the war of the Roses, a good understanding of classical literary form and good use of counterpoint and symbolism.
