If I want to learn Afrikaans am I better off learning Dutch and then adjusting or simply going for Afrikaans?

there's probably a bit more material in Dutch and it's a bit more "proper". But it's not a big thing either way

The availability of resources is my main concern -- if there were the same amount I would probably just go for Afrikaans without thinking too much into it.

I went with dutch because I'd rather learn "old" languages - of course dutch is far from what old languages are like (but I still don't like how afrikaans has evolved) - and maybe it would be convenient with afrikaans if some smaller chance I met an afrikaans speaker or something.
You should do the one you like most, but it would probably be easier to go from dutch to afrikaans if you end up not liking dutch.

Afrikaans is very easy. The problem that I see is that it will be weird for you to upgrade to dutch and from there to german, which is something that you'll eventually want to do.
